FRUITY CHIA PUDDING

Here’s a little recipe for a simple and healthy chia pudding, which can be used for breakfast, as an energy booster during the day if you need something between breakfast and lunch, or even as an evening snack whilst chilling inn front of the tv :)

If you like the taste of coconut and banana - this recipe is perfect for you!

All you need is (for 2-3 portions):

  • 6 table spoons of chia seeds
  • 1 tin of low fat coconut milk
  • 1 ripe banana
  • Fruit toppings of your choice

Start by mixing the chia seeds together with 3 – 4 tbsp. of boiling water. The seeds will start to expand, into a jelly like base.

Add the tin of Coconut milk to the chia base, and mix well.

Mash the banana, and mix it in with the rest of the dessert.

The banana gives the dish a nice sweetness, but if you would like it even sweeter then you can add a tiny bit of stevia.

Put the dessert in the fridge, for at least 6 hours before serving. The chia seeds will keep on expanding, and when they are completely soft – that’s when it’s ready to be eaten.
