LEMON BIRTHDAY CAKE
- 350 gram unsalted Butter
- 250 gram Sugar
- 350 gram Flour
- 2 x Vanilla bean
- Backing powder
- 6 x Eggs
- 150 gram or more icing sugar for the topping
- 2 Lemon (3 tablespoons fresh lemon juice, plus finely grated zest of the 2 lemon, plus more for garnish (optional))
Preheat the oven up to 170C, mix together 350 g softened unsalted butter and 250 g caster sugar until pale and creamy, then add the 6 eggs, one at a time, slowly mixing through.
Next sift in 350 g flour, then add the finely grated zest of 1 lemon and mix until well combined. Spread some soft butter into your loaf tin then spoon in the mixture and level the top with a spoon.
Bake for 20 - 25 mins until a thin skewer inserted into the centre of the cake comes out clean. Leave the cake to cool down for at least 30 min and then sift the icing sugar on top of it.
