HOMEMADE PORTOBELLO MUSHROOM BUN BURGER

This delicious recipe is a healthy alternative to a normal burger, we must say, sometimes we prefer this one to the original!

When you are trying to watch your carb intake, you have to think of clever ways to make your meal just as delicious as if you were munching on those “oh so yummy” bread and pasta dishes.. We think this is a particularly good one!

Ingredients for 4 burgers:

  • 1 pack of beef mince (about 350 grams)
  • 1 onion
  • 1 egg
  • 1 tsp of coriander powder
  • 1/3 tsp of nutmeg
  • Salt, pepper
  • 3-4 drops of Worcestershire sauce- optional
  • Olive oil
  • Avocado, tomato, red onion, spinach and cheddar cheese to garnish
  • 4 portobello mushrooms

Mix the mince with the onion, egg and spices. Form 4 patties and leave them in the fridge for about 10 minutes to firm the patties up. This will give you time to prepare your mushrooms and garnishes.

Warm the oven up to 180C. While the oven is warming up, drizzle some olive oil, salt and pepper on your mushrooms. Roast them for about 10-12 minutes.

Heat the pan on medium/hot. Once the pan is hot, add a little olive oil and start cooking your patties. Make sure you keep turning them over about every 40 seconds so the moisture stays in your patty. This will also help getting a nice even color and consistency. We cook the burger meat for 4-5 minutes, as we all like a little bit of pinkness inside :)

As an option, we like to make a simple dressing for the spinach. Mix a tbsp of olive oil, a tbsp of white wine vinegar and a pinch of wholegrain mustard.
